Honestly the most reasonable explanation is, assuming you were human, is that an invader in your world cheated and killed the boss for you.
Were you human when it happened?
If so.
Invader cheating their way into killing the boss for you. Trust me, it happens.
What I found weird was that the boss still remained visually intact and active every time I respawn and there wasn't a bonfire anywhere near which I assume is a giant glitch caused by the invader and whatever they were doing to the game.
