Or maybe Necropolis; not really a Souls-like, a rogue-like or whatever, that I enjoyed. There's a dogde button and cool levels, and it's pretty easy.
Nioh is more like Ninja Gaiden, but pretty close in terms of difficulty with more technical combat than DaS1. Again, lots of exploration but with a level selector.
Lords of the Fallen is easier for me than Dark Souls. Has really unique combat combo mechanics (they aren't explained. I found it on accident because the UI does things when you expend stamina), but the story was hard for me to follow due to boring me and I got lost easily. I don't know why I got lost so easily, I know Dark Souls world by heart.
I'm currently playing Blashphemous, which is a nice change of pace. Very dark soulsy. Narration says some stuff. Your character wakes up, and you have nothing else to do but walk forward.
1 is hard due to its ♥♥♥♥ design mostly, but when you figure out how to get around it, its insanely easy.
3 is potentially harder than Elden Ring at times, depending on boss and build.
2's dlc is ♥♥♥♥♥♥ for sorcerer, harder than all the other games.
There's also no shame in reading guides, to help you. These games are also made with the internet in mind, which explains some of the needless obscurity. Just swap the guide, as soon as they recommend the "Drake Sword". That's a telltale sign of a bad guide, that won't really teach or explain you anything.
I also doubt, that you gain much from souls-likes, if the idea is to get into Dark Souls. For some, the idea of "challenge", is to give bosses 0-frame start-up attacks, that aren't just short-ranged pokes, dealing little damage. Also, they usually don't go for the same style of methodical, weight-y combat. From the one's, that i've played, only "Mortal Shell" and "Ashen" did.
I do recommend starting with the ps3 version of demon souls which is like an easy mode dark souls or just keep pressing into dark souls till you beat it.
Also take your time with any soulslike game and think smart...that will greatly reduce the difficulty. Outsmart your opponent and dont be afraid to take cheap shots your first time through the game
Be aware of how mechanics like Kindling work. The game never explains this particular mechanic to you but it's worth looking up because it makes the game a lot easier.
Also keep in mind that attacking NPC's is, more often than not, a very bad idea and can potentially make the game a lot harder.
Finally, if you make it past the first boss beyond the Undead Asylum you'll be able to obtain a hidden weapon, the Drake Sword. You need to fire arrows at a dragon's tail (you'll know it when you see it) approx 60 times to get it. This particular weapon trivialises the early game but drops off sometime in the mid game so you will have to switch your weapons out when you notice that your damage output is subpar. If you're unaware of how upgrading weapons works, this is also something that you should look up.
Good luck and trust me, the game is worth persevering with despite how challenging it can sometimes be.

It's a group of RPG games, regardless of other genres they take from, that incorporate technical combat mechanics, exploration (could be open-world or not), and sometimes dying is a game mechanic.
Lots of games that could be called Souls-like also may be considered Metroidvania; a description that works the same as Souls-like, but for Castlevania/Metroid rather than Demon Souls.
