To summarize:
- Oolacile is the best for low int builds. It also has only 0.5 weight so if you want sorcery just for utility stuff like fall control or cast light in Tomb of the Giants, it usually won't mess up your weight.
- Logan's Catalyist is really good on high Int builds.
- Tin Crystyzation Catalyst is very strong but cuts spell casts by half.
- The Sorcerer's Catalyst is never worse than "fine" if you don't feel like going through the work of getting a rare alternative.
- No, I don't know why the Demon Catalyst exists either.
Don't fight Demons like him head on. Stay behind him until he does his AoE and run in for 1 or 2 hits. Rinse and repeat. If you're still having trouble you need to up magic or fire resist. You can do this with armor. Just look for whatever has the best stats for that. Demons of that kind are weak to bleed and Black Knight Weapons. Most of them are also weak to magic damage. Firesage is really weak to it. So just hammer him with spells.
Tin Banishment has better physical scaling though, but it requires high dex to pay off.
False. You spray them with Toxic Mist and then you eat Blooming Purple Moss.
Because if you suicide run for Crimson Set and Tin Banishment Catalyst at the start of the game the spear tip R2 will do like 200 damage on most enemies up until Sen's. Which in my playthrough was more than my sword was doing.

It's not hard but at starting SL it can be frustrating. Totally worth it. The mag adjust is actually not as good as Sorceror catalyst but that sweet sweet R2 will carry you until you can upgrade your sword.
Lots of weapons don't have a real purpose, like why is there 2 ♥♥♥♥ straight swords, the hilt and the broken sword. I get it, it can be traded for artorias' sword, but why does a SECOND one exist?
Why should you ever use Vamos hammer?
Why should you ever use thing ghost dagger thingy?
It shouldn't, Demon's has D/D vs the TB's E/D do it should perform better, no?
