Every upgrade path is useful in some situation, or to some build. (Except raw, which is BAD, and possibly occult, which I never get any use out of, so I dunno about that.)
It's a good idea to have a fire weapon, a divine weapon, and a normal weapon, at the very least. All the upgrades suggested seem sensible, but here's what I'd do:
You probably will get the most damage out of the Uchi and the Halberd using the normal +15 upgrade path, if you have decent strength and dex stats. You can keep increasing the damage by levelling up your strength and dex, so if you plan to do that a lot, go with normal +15. The same goes for the zweihander, but people also really like upgrading it with fire or lightning. A lightning or fire infusion doesn't get any scaling, but gets a lot of elemental damage immediately. It's probably the best weapon to do that with out of the three you mentioned, as it does the most damage per swing, so proportionally less damage will be taken away by enemy's elemental defences. I'd upgrade it with fire, because lightning infusions take the same upgrade materials as normal +15, while fire weapons need green and red titanite. A fire weapon is very useful for some parts of the game, as it will obliterate some enemies that are highly resistant to physical damage, and for other reasons.
That's my two cents, and the reasoning behind it. It really depends on how you want to play, though. Almost anything is viable, so don't let me tell you what to do.
Get your favorite weapon to +15, normal infusion. If it's your first playthrough, you'll want the extra damage because in Dark Souls, weapons that are infused with fire or lightning split the damage in half and you will be disappointed with the results. Save those infusions for another day, when you are more comfortable with the game. +15 on anything will give you some really strong damage output.
