[SPOILERS] If only I could be so grossly incandescent.
This is a sort of mini-theory that I haven't read anyone else mention before, and it's possible I'm wrong or that you just won't agree, or on the other hand, maybe this is blatantly obvious, but I've never heard anyone else mention it before, though it's not really that amazing either.

Anyways, I know that in Anor Londo, the sunshine is just an illusion, and there are a couple of things you can do to dispel it (such as shooting the "princess").

But as far as I can tell, it's not just Anor Londo that has illusory sunshine. Rather, everywhere there is sunshine, it is illusory, in particular Firelink Shrine and Undead Burg. This is why when you go into, for example, Dark Root Garden, it's suddenly nighttime with a shining moon. (The illusion does not extend that far, I guess). And as the intro states "man sees not day, but only endless nights".

This means that Solaire, standing on the castle wall, admiring the sun, is admiring an illusion. I really like the line "if only I could be so grossly incandesent", but it just struck me how ironic that is when what he's admiring is not even really there.

I like sunshine
Great theory. I guess we have new loremaster.
Could well be. What about the DLC sunshine though - also illusory?

The DLC was in the past, so perhaps not. The sky is rather faded even so.
If that's the case then after dispelling the illusion the sun should have disappeared from other parts of the game. But who really knows? The lore and story in this game is a big ♥♥♥♥♥♥♥ mess.

I guess it must be maintained by someone/something else. (Frampt I guess?). It's also possible they were going to but never got around to changing so many areas.

It pretty much *has* to be the case, as far as I can tell. There's the line in the intro, but also it just wouldn't make any sense otherwise. Why does Anor Londo have perpetual twilight but nowhere else? That's the same sunshine that you see from Sen's Fortress, or the bell tower, etc. If there's sunshine in one of those places, there's sunshine in all of them, and the same for twilight.
