That's a dumb suggestion, especially since you're not going to be facing the enemy if you don't use lock on, which is kinda what you need if you're trying to block.
Having a 4 direction roll when locked on in ds1 is an OBJECTIVELY bad thing when compared to ds2 and ds3. You can't just say "don't use it"....
DS 1 is the easiest of the 3 but also not as easy to get in to if you haven't started out with it. It's a strange beast but it is what it is.
With regards to the butterfly - Pyromancy / sorcery / bows can hit him while flying but you must be carefull with his attacks. they hurt quite a lot ...
Melee: Go through your stack of useless shields till you find the one with the highest amount of Magic Resistance - keep it up and also keep some humanity in your pocket incase you run out of estus.
Estus: you can kindle bonfires to gain 10 sips instead of 5.
NPC: the witch solos the butterfly, if you are truely stuck use her.
Experience in the soulslike genre also plays a role.
And ignore @rses like Apathy, if you want a summon there's usually someone on the forums here ready to help. You can do this alone though. You may just not have good enough gear or stats to make it feasible for a newb.
Moonlight butterfly is hands down the easiest dark souls boss in the entire series please troll harder.

Step 5: Cross the fog gate
Step 6: While you drink your Coffee (and smoke, probably) roll to your left or to your right a few times, depending on the situation
Step 7: Profit

If you need help with Pinwheel there is a summon that can kill him for you too without your help 100% of the time.
