If you have a decent int, pinging him to death with sorcery from distance is probably the easiest way to go.
Usually it would go something like this:
1) Parry his starting leap attack
2) Sipp estus
3) Press parry button
4) Repeat from step 2 until dead
- Fire and physical resistant gear, if sufficiently upgraded, helps you withstand his attacks. Black Knight Shield and Dragon Crest Shield are particularly good shield-wise
- Eating a Green Blossom will help you recover from his aggressiveness periods and put more distance between you two for a heal, and generally help with stamina management.
- Gwyn has exactly 100 poise. That means two hits [IF TWO HANDING] from an axe, hammer, greatsword, curved greatsword, Black Knight Greataxe (it's faster but weaker than most greataxes), or any weapon from a heavier weapon class will stun him, helping with stamina management again and beating him overall.
Btw. Halberd +15 is a good weapon but its scaling is mildly Dexterity-focused. If you want a halberd on a Strength build, Black Knight and Gargoyle are the way to go, although Halberd does fine - it just lacks the poise damage to truly wreck Gwyn.
