Oh, I believe you, honestly.
But like... it's like my primate instincts see a huge guy with a huge weapon and tell me to dodge, not parry.
Capra is a status check:
Does the player have enough stamina to block and fend incoming difficult enemies? Do they have enough HP to be moderately comfortable fighting? Do they have enough poise not to get overwhelmed by enemies given their combat style and ability? Can they gear up/dodge/block/time their attacks wisely? Etc.
Fail these, Capra stops you on your at tracks. To put it better, his second dog does, actually...
How I did it:
I am nuts and wanted my first playthrough at minimum Vit and a Dex build so this boss wrecked me a dozen times until I thought "I am doing this the stupid way - time for a temporary change". Put on medium load equipment for poise, bought magical shield for stamina, RAN FOR MY LIFE to the corner on top of the stairs on the right, killed undead doggos, stomped Capra dead.
Pro tip: first move a little to the right then hard turn to the stairs to juke doggos.
-Use medium armor or armor with some poise, poise it's a value that determines how many hits you'll take before being knocked back or interrupted, every weapon and enemy has it's own poise damage, you don't have to look for it, if you don't want to use heavier armor, go to the forest and get the wolf ring, it grants 40 poise if you wear it, more than enough for the battle.
-Use a weapon with high poise damage or added status effect, with weapons it's easier to know the posie damage based on simple facts, a heavier weapon it's more likely to push enemies around, however if you don't like using heavy weapons, get something like a katana or the spiked mace, the capra demon can be easily knocked back from high poise damage OR you can use bleed effect to chunk his hp away.
Maybe there's an intention to make you learn this right there, with this set up, it helps almost evrywhere in the game.
Run up the stairs as soon as fight starts
Dogs are faster than Capra so you can kill them before Capra comes
Without the dogs fight is incredibly easy
At this point you can "Dodge&Hit" or Bait him near the stairs and spam plunging attacks.
Only you must have it's a fast armor and dodge his attack. This boss has low life
Yeah you can kill him that way, but it's probably the worst exploit in the history of gaming for beating a boss. If you kill him that way don't even take credit for beating him.
