Did the hate originate from Scholar not being a direct sequel (storywise) to the first game and then a bandwagon of hate have followed?
SPOILERS for Demon Souls, Dark Souls 1 and Dark Souls 2 (duh)
The gist: Dark Souls 2 improved on some things, but the developer team didn't understand what made DkS1 or DeS good. Instead they focused on difficulty, which was just a catchphrase by now. They made more bad decisions than good, IMO. There are some distinct examples of how things were badly designed.
Did you play Scholar yourself?
And yet, besides that, I think it's better in many other areas as well... gameplay is a lot more smooth, scenery is a lot more beautiful, Majula > Firelink Shrine, better PvP, bigger equipment variety, more viable builds, etc...

DS2 is kind of garbo and was a let down coming from DS1
for casual players SotfS was better then DS2 no doubt about that
SotfS made things better then DS2
since DS1 was probably the game most of the cummunity played first it will always have a nostalgic factor to it
personally just talking about the Dark Souls games DS2 is the weakest then SotfS comes in third, not because its bad just because I like 3 more, and my most favorite game is DS1
kind of nostalgic because I played it first but because there are so many things I dont like about 2 and 3.
it mainly comes down to some reused weapons that make 0 sense to exist (like why are there black night weapons in DS2? there arent even any black nights in the game, why not simply use completely different weapons)
and the reuse of rings and especially +1 +2 +3 version of rings
2/SotfS and 3 are kind of limited in ways you can go while 1 felt way more open, especially with the master key
thats of course just personal opinions but maybe it gives you some more insight why most people prefer 1
and you really have to differate because SotfS =/= DS2
in SotfS they adeed and removed alot of enemies in the game world and replaced enemies enemies in other parts of the game and changed item locations
SotfS is a remake of DS2+addons and is generally considered a better game for casual players (only speedrunners favor the vanilla DS2 version)
Imo, DS1 is the weakest (from what I saw DS3 looks amazing and I can't wait to play it but gotta finish DS1 first)
For me, in the end, it's probably going to be a choice between Scholar and DS3 when deciding which is a better game but I don't think DS1 will improve enough for me to even consider it as the top title... DS1 is a good game though and imo it's no surprise that DS1 is the weakest since it's the oldest of the three
And good graphics =/= good game.

I personally dont care for PvP so that aside
yea the scenery is way more beatiful and all but thats only graphical improvements and considereing this game being newer then 1 it kind of have to looks better here and there
but the equipment variety and more builds makes the general decisions on what to keep and what to do harder and most people appreciated the simplicity of 1
DS3 has even more equipment and its kind of overwhelming even a bit too much
