All you can do is gain back resemblance of you former self and strength (or potential) by using stolen pieces of souls and humanity.
When u die u get temporarily hollow-undead, creeping back towards the latest bonfire (if you wish to continue the adventure...if not you become one of the mobs...that's what I imagine) leaving behind a bloodstain of your soul/humanity collection
I'm not sure who the meat is for, though.
Alot is unclear about the Souls lore, and I think that is only for the better. I interpret it like this:
I think because you are Undead, in a sort zombie-like state, that you don't have to eat to survive. As Playerjjjj said, digesting food is not something an Undead can do anymore. Undead can 'live' for a long time (if not forever?), and only will go Hollow when they lose their purpose.
Humanity is like a state opposite of being Hollow, wherein being human you have a greater purpose than just being.
I'm not sure if Estus itself is food, since living people don't seem to like it. It could be some sort of essence of the bonfire, since it refills at a bonfire (and when someone kindles one). Why it was made into soup in 3, I don't know.
The Darksign you are branded with transports your being back to the bonfire you linked last with. The bonfire's essence/warmth heals you.
Oh yeah, I forgot about the Butchers. And of course there are plenty of enemies throughout the series who do their best to eat you alive, but that might be more out of malice than hunger.
After dying, he would appear with it again or without it?
We can see that something similar happens in ds2 with Vengarl, can't understand how dismembering actually works with the undeads.
I think that's one of my biggest problems with dark souls 2, emenies stop spawning. It would have bene fine is more hollowed undead starting showing up somewhere else, but when they stop spawning, it seemed to kill the lore. Also, all the undead look hungry, like they're constantly starving.
So, then, if nito is first of the dead but he still lives, and he's not undead, why did he come back? is it soley due to the great soul? Also, since we see in game that you can 'consume' souls, why can't teh undead souls be consumed? Is it more that 'it's not the body that's immortal', but the soul that's immortal? So, some enemies, mainly the bosses, have giant, poewrful souls, but those souls can be destroyed, and the undead have weaker souls that are everlasting?
Also, souls are not consumed, but kept. See it as treasure. A soul from a Lost Undead is only worth so much, where a soul of a Lord of Cinder is worth more.
Only Firekeeper souls have Humanity in them, and seem to be able to be consumed (not sure if that is a localization error). When you 'bind' one to yourself, you will get Humanity from them. That is because Firekeepers themselves are filled with Humanity when linked to a bonfire.
Also, Dark Souls 2 was not helmed by the original director, Hidetaka Miyazaki. It was a bit different in gameplay and the game's lore was written and implemented by another team. That resulted in some things being changed. That's when you get things like NightmareGats mentioned, with dismembered Undead and non-respawning enemies like you said.
