They don't die. The necromancer revives them so you need a divine weapon to put them down the first time you fight them. Divine weapon prevents the necromancer from reviving them, see?
In my previous playthroughs I went in really late after picking up a Silver Knight Spear in Anor Londo which is a divine weapon. Since in this playthrough I am trying to go to the catacombs before reaching Anor Londo and I have given the divine ember already to Andre, I thought I'll use one of the side weapons as divine.
Also if you already killed the necromancers the skeletons will stop reviving.
Personally I'd say that Claymore is too good for quality builds to make into a Divine weapon. If you're using a Black Knight Sword the Claymore will eventually outpace it in pretty much every single way.

I am sure there is one near the start of the game. Later in Nieto's room when you fight them there are also a lot of skeletons. Nieto revives them if you don't kill them with divine weapon.
You don't have the stats to genuinely support any good divine weapon at this point, so pretty much anything with decent damage will do. If you can stomach axe moveset and cut off the tail from Gargoyles I actually recommend the Gargoyle Tail Axe or Halberd, since they boost your bleed resist and poison resist which are helpful in the Catacombs. If not, save the Claymore and use a B@stard sword, Broadsword, Longsword, or Reinforced Club instead. You can also use the Claymore as long as you realize eventually it'll be better to put it back on the normal path, making the Green Titanites wasted (they're not so expensive in the long term, though)
Later in the game I'd have a bunch of other recommendations, particularly if you reach at least 16 faith (there are some good things you can do with midlow faith if you know what you're doing).
Artorias' greatsword is utter #(*&$(* for its requirements until very high levels and the OP doesn't have the stats to wield it, anyway.
Gargoyles are dead and Lautrec was not able to cut the tail for me. :D
So no Gargoyle halberd till Anor Londo I guess. Artorias Greatsword didn't impress me. I have the normal one on one character.
