Is the butcher's knife any good?
I decided to do a build around it and a ring that had the same effect as the knife.

It's a pretty nice strenght weapon, can also be used in pvp...a bit, i has a rather fast attack speed, and scales pretty good, the downside is, that it doesn't deals a lot of poise damage or single hit damage (doesn't consumes much stamina either) but overall i like it a lot for pve

Tbh I'm surprised they have the nerve to call this a knife it's bigger than most swords. lol

In game, it's under the axe category

It's an axe, it deals axe poise dmg which is same as any greatsword, pretty great. Also good stunlocking potential, you only get the whif animation if you miss.

It's only drawback is that it weights 10 units.

What ring are you refering to?

Evil eye I think thats what it's called and it acts like the knife.

Knife :
- Gives bonus health per hit
- Gives more bonus health if you hit repeatedly as something dies

Ring of Evil Eye :
- Gives bonus health as you kill people.

Anyway, axes are pretty good if you can handle the moveset. As long as you're hitting the repeat strikes can come in very fast and stunlock well. It'll never be the most damaging weapon but as long as you focus on Strength and maybe develop a way to give it a buff with a spell it will be good.
Oh yeah, those healing effects are so minimal you can do without. Didn't even remember that the butcher knife has those
I don't think I've ever used it in dark souls 1 but I have in dark souls 2. It does decent damage in das2 but I really don't like it's moveset. It swings like a straight sword and doesn't have a weighty feeling to it. I like the "oomph" most strength weapons have in dark souls 1. Only a few have that "oomph" in dark souls 2 but it's not as satisfying as in dark souls 1.

I can tell I made it to Anor Londo with it.

It's fantastic for no death runs or no bonfire runs.
