Thank you very much that was indeed the problem and this guide made me understand more what the resolutions actually do and knowing that I can lower the render resolution even further is really nice, if only this option was a standard graphical option in most games nowadays potato gaming would be way easier.
Now my problem is that apparently Dark Souls crashes as soon as I try to unlock FPS, any idea about that ?

Edit : nevermind still crashes the game, I'll look into disabling DEP completely
I'm using windows 8.1 and no, no softwares running in the background that could mess with the game.
Steam ran as administrator
- Dark Souls ran as a administrator
- Read Hoqjed's low resolution Dark Souls guide stated above for working render resolutions
- Beta version or normal version doesn't seem to matter
- DEP on or off in my experience doesn't seem to matter anymore
