I would say it's a toss between the Dragonslayer Spear and Quelaag's Fury Sword, I think.
If I had to pick just one, I'd pick the Dragonslayer Spear.
Artorias' greatsword isn't a good weapon unless you have a high SL.

I also really like the Chaos Blade a lot, even if it's essentially a slightly better Uchigatana that hurts you, can't be buffed (normally), and has weird R2's.
Shoutouts to Darkmoon Bow, even if setting up a Faith/Dex build to use it properly is horrifically gimmicky. I could see it being useful in a co-op/support build, though. Use the bow, use moonlight arrows, and use the party heal spells...
Quelaag's Furysword would be a much more useful weapon, as it's both fast, and hits pretty hard. It's probably the overall best boss weapon, at least in the greatswords category.
The really useful boss weapons (that require boss souls to be made, so Obsidian Greatsword is excluded) are the Furysword, Chaos Blade, Golem Axe, and MLBH. The Lifehunt Scythe deserves some honorable mention, but considering that using it essentially either locks your shield into a relatively ♥♥♥♥♥♥ shield or locks your ring slot into a relatively ♥♥♥♥♥♥ ring... Of those, my favorite is probably the Furysword.
Both are awesome, esp against bosses. Ironic
- Quelaag's Furysword. Very good range and easy to ghost-strike with. It also requires very low investment (you're good with 20 dex) to actually do damage, even if it's split.
- Chaos Blade. It's the best weapon in the game. That's it.
- Golem Axe. Memes.
- Dragon Bonefist. Bad.
- Artoria's Greatswords. Bad moveset, slow, very high requirements, split damage, good backstab damage. Iirc, the only one which could worth it was the Abyss Greatsword (I don't remember why).
- Crystal Ring Shield. Bad.
- Moonlight Butterfly Horn. Pure magic damage, not very good range, decent R2s.
- Darkmoon Catalyst/Bow. Bad.
- Greatshield of Artorias. Pick the Eagle Shield and forget about this one.
- Great Lord Greatsword. Horrible R2s, very low stat investment to do important damage.
- Manus' Catalyst. Only good with very high level.
- Lifehunt Scythe. The autobleed factor makes it bad.
- Smough's Hammer. Very slow. Very heavy. Very expensive stat-wise. Very bad.
How dare you? The falcon punch is the best thing in this game. Especially as a dragon bro. The satisfaction after you deliver a blow like that to a person is over 9K.
Misspelled name. And this is a PvE sword. Your complaints are irrelevant.
But amazing for a shield-only run.
It actually has amazing range, and it's superb when used by a mage in PvP.
Except this is the best bow in the game.
Except that if you use moss, and you run into light armoured players, you can literally end a fight in 2 hits.
This is why they teach you in school that you should always answer the question. Get it?
Things are always relative due to perspective and experience.

OP: I agree Furysword is altogether most effective and also kinda easy to get into but still very... ugly (only fashionable along with long hair barely covering delicate chest imho)
my favorites r Golems Axe and Lifehunt Scythe (I've yet to try these myself, know them only from facing them) seemingly being somewhat special AND serious
Among the soul weapons, my fav is probly the Furysword, if only because I dislike the Chaos Blade selfharm, and at heart love quality builds and dislike a lot of the huge weapons, things like Golem axe, Smough hammer... Fury Sword is a fairly simple no nonsense weapon that I can actually use.
- Abyss Greatsword has a heavy stat requirement, but if you're fine with that (I.E. planned to do some mini double-casting, or don't care about meta SL ranges), you could have some fun with it, although the moves are a tad too 'telegraphed' for PVP and you need a high humanity to bring out its full power.
- Chaos Blade : It's a katana in a Dark Souls game. Nuff said. I personally don't use katanas, but come on. It's a katana. In a Dark Souls game.
- Crystal Ring Shield : It's not a shield, it's an extra set of projectiles. I hear these specific projectiles used to mean something, but now they're somewhat useless.
- Darkmoon Bow : It's fairly cool.
- Dragon Bone Fist : I never actually used it. Fist weapons' lack of reach scares me.
- Dragonslayer Spear : It does have a somewhat heavy stat investment need, but it's one of the better spears for quality builds. If only it wasn't quite so heavy.
- Golem Axe : Heavy, but a decent weapon. Plus you get the memetic distance slash.
- Greatshield of Artorias : Do you like greatshields? Do you have 10 int and want to once, just once, block a lot of attacks without any stamina problem? Then it's very good. Otherwise, it's just good.
- Greatswords of Artorias : The movesets are bad, stat investment requirements are huge, and the 'return' bonuses aren't all that good. Check Abyss Greatsword instead. However, they can be usefulish in PVE.
- Great Lord Greatsword : It's a quality greatsword. That means it's good, especially if you're not a weapon buffing type.
- Lifehunt Scythe : If you're not feeling edgy enough with a katana.
- Manus Catalyst : I dislike having halved spell uses personally, but it's probably a better option for PVP?
- Moonlight Butterfly Horn : It's a spear. It deals purely one type of damage. Low stat requirements. Good for mages. About the only flaw is no counter damage bonus, but you can have fun with that weapon.
- Quelaag's Furysword : It's my personal favorite out of the bunch because fire is actually surprisingly useful in this game, its weight and requirements are not bad, and its double dex+humanity scaling really helps boosting it up. Make no mistake, this is not 'the' weapon, but you can find plenty of use for it.
- Smough's Hammer : Now, great hammer movesets *are* good in this game, but personally I find the stat requirements and weight too ridiculous to bother. Just grab a large/great club or Dragontooth instead.
- Tin Darkmoon Catalyst : It's good if you can spare the slots or are good at swapping. Primarily used to buff weapons when saving your Darkmoon Blade / Sunlight Blade for that someone special on Valentine's Day. Can also be used for Remedy/Resist Curse / Dark Sorceries.
Other Demon Titanite weapons :
- Gravelord Sword : I like it. Doesn't require a great stat investment, has a strong attack useful in narrow passageways, and inflicts toxic (which is automatically better than poison).
- Demon's Spear : It's a good spear for strength and quality builds early on, but its effectiveness in the very long range somewhat diminishes. Still finds it uses on elementally weak opponents.
