In general though, considering amount of souls gained, how easy are the enemies to kill and the distance to the bonfire, the best place is probably the phalanx enemies in the painted world

For me, the best place I've found so far is in the painted world of Andarial.....there's that big group phalanx of those distorted blob enemies that have shield and spears. Go through and mow them down, and you get about 9k souls each run. The starting bonfire is very close. It should be noted that you'll have to have already opened up that shortcut for it to be viable.

There are 11 Silver Knights in the castle halls of Anor Londo, and on your first playthrough I believe that they will each net you 1,000 souls upon death. If you overkill them, then you get a bonus percentage, which I think is an additional 300 souls. I'm not sure, though. Anyway, if you're good at parrying and you have an efficient weapon that will kill them in one riposte, then you can simply parry and riposte every knight, then go back to Solaire's bonfire and repeat. You can equip the Symbol of Avarace and the Covetous Silver Serpent Ring to get even more souls. You can equip the Hornet Ring to do more critical hit damage, and this can also be combined with Power Within for even better results.

Later on, you'll be able to do this in Kiln of the First Flame with the Black Knights, but even though they will net you more souls, there are less of them and they're spaced out over a longer distance between one another, so I still believe that the Silver Knights will net you more souls and in a shorter period of time.

It takes me about 3 or so minutes to kill all the Silver Knights, and at the end you can get anywhere between 11,000 and 18,000 souls. 18k every 3 minutes isn't too bad, but I admit that it can be very monotonous. You can also place your summon sign and help people with Ornstein and Smough, they will net you 25,000 souls upon death, and this number can be increased if you equip the Silver Serpent Ring and/or the Symbol of Avarace before the souls are transferred to your character.

Git gud at parrying, throw on a podcast/documentary/music playlist/whatever and grind away.

Fastest way to soul farming is to exploit the invasion/summon PvP soul reward. Summon, kill, get summoned, get killed, level up, repeat.

If you don't have friend to do that with you, soul duping is the next "fastest way," but it's a glitch exploitation, and may break the game/may be seen as cheating by community(which you are)

Other than the two exploitation above, the fastest way to earn souls is to farm the phalanx at the painted world. This can net you, 10,000 souls per ~1min in the ng, and double that in ng+, with slight less or more time depending on your gears and magic equipments.

You don't need soft humanity to farm souls.

I always just farmed the 6 giant knights around the bonfire at Anor Londo.

I always just went to the forest. Forest hunters give okay souls with dried fingers on you. If you're not very confident about it then take a phantom or two with you, they'll be glad to help.
