Infinite Humanity Without Cheating

Note: You must have unlocked the Crystal Caves but have not killed the boss there (I assume. I don't know whether this will work if the boss is dead)
1. Set your spawn at the Undead Parish bonfire.
2. Kill yourself or warp back to your last bonfire. (If you kill yourself, do so where you can easily reclaim your souls)
3. Warp to the Duke's Archives bonfire.
4. Take the passageway on the right(if you've opened it up) and head down the stairs to Crystal Caves
5. The guy down the stairs and to the right will always drop humanity.
6. Repeat until you have as much humanity as you want.

Or just farm from the humanity phantoms in the DLC .

1. Go on a suicide run to New Londo to get the Firekeeper Soul as soon as you arrive Lordran.
2. Do the yes/no message glitch with the Firekeeper Soul around 20 times so you get 99 humanity.
3. Enjoy.

Or do the opposite of what op says and Cheat Engine them like normal people that can't be farming for 4 hours straight

The time to get 99 humanity comes out to a bit under 2 hours in my case

There are also the endlessly respawning baby skeletons just before Nito... those and the humanity sprites in the dlc seem much less tedious than having to run back and forth just to kill one enemy, honestly

While mine is under 5 minutes including finding and installing CE/tables

there's also the group of rats in the Depths for farming early on
