I only had fun with knives in Dark Souls 3 I believe, it was very fun to dash around and poke peeps with a Hollow Bandit Knife.
1) what is wrong with dex? I am kind of happy that dex is so viable in this game compared to next titles
2) just because you don't like how strenght weapons look here doesn't make them bad. In fact they are pretty good. Hail Zweihander! Or Claymore....quality build right there
There are several strength weapons I truly adore, Man-Serpent Greatsword in particular.

And I really mean pick a weapon, play with it for half an hour until you more or less comfortable with it and can chain combos. If you just look at a weapon and stats or try out moveset once and then ditch...you gonna have a bad time.
I'm sure most of people will say that the "right" way to play Dark Souls is by picking a weapon you like and or are used to and sticking with it. It will be the most efficient.
I used to be pro dex because fast weapons blah blah. Hated strenght weapons because they are usually slow...now I am hooked on UGS and such. So things do change, just gotta keep an open mind. The game never had good graphics to begin with so you can't expect epic details on the weapons. And yet they manage to be epic
That way, you cna enjoy strength weapons with ease, because there are lots. And yes, they have the same movesets because it's a video game and weapons of one category tend to have the same attack patterns.
Actually, I'd say there was more emphasis on quality builds than Dex. There may have been more dex weapons this time around, but a lot of them were ♥♥♥♥♥♥♥♥.
