Well, then, to create the best tank I decided to take an alternative approach and make sure he can tank anything, including status effects. Ring swaps with Steel Protection sometimes recommended.

Basically the idea is that since you're up against enemies with status effects and not just straight-up damage, a build should be able to tank both them and damage effectively, while retaining offensive capacity. Gargoyle Halberd and Gargoyle Tail Axe help in both regards and you can choose whichever you would like.
To further improve your ability to combat status effects, esp. bleed buildup or activated toxic, int has been upgraded to 16 rather than 15 so you can use the Remedy spell. Simultaneously as long as you have the Oolacile Ivory Catalyst, Greater Magic Weapon gives you 198 magic damage boost per cast. Both the Gargoyle Halberd and the Tail Axe are just fast enough while hitting to reasonably take advantage of that. Paladin set ensures you never have to worry about curse, we all know what Giant's parts are there for and all your status resistances are significantly boosted by the Blood Shield and the Gargoyle weapon.
Poise 70 lets you poise through Black Flame and all weapons except the heaviest category (Ultra Greatswords, Greataxes and Great Hammers).
Ps. Starting as Wanderer will let you reach these stats at SL 125, but I didn't think that was a particularly tanky start.
