People actually think Ornstein and Smough is harder than Fume Knight.

What.
Tbh I don't know how O-S gets top billing each time. The fight is good, but not really that challenging or epic after the first playthrough.

Because people jump at them unprepared and some bring Drake Sword into damn Anor Londo.

Fume Knight/Pontiff Sulyvahn are a cake walk when you learn their super telegraphed attacks. Ornstein and Smough have complete troll mechanics where the one can sneak up on you from behind while you are trying to hit the other which makes them technically inferior bosses as they are more cheap than hard, the same could be said about Throne defender/watcher in DS2. Any fight that throws multiple bosses at you at once turns more into an exercise it dodging and rolling than it does in parrying or correct positioning.

Personally, I think Darkeater Midir from DS3 is probably the hardest boss in the Souls series as he is an absolute tank and with the right combo can devastate you in seconds if you are not careful, although not fun to fight in any way he is rather fair once you learn his move set and don't lock on to him to avoid his 360 tail swipe attack.

I wouldn't call 2 bosses at the same time cheap. You have to learn how to handle both at the same time, managing their positions etc etc. I think duo bosses are among the most fun bosses in souls games. The twin demons from DS3 are my favorite DS bossfight so far for example.
