In Dark Souls 1, with only two ring slots (compared to 4 in Dark Souls 2 and Dark Souls 3), what rings you use is much, much more valuable. So while one might say "why not just use chloranthy ring, its better?", there isn't always enough space as other rings will fill more important roles. Example: Havel's Ring and Ring of Favor and Protection when playing with giantdad. With those two, you can wear all but the headpiece of the giant's set with a grass crest shield and chaos zweihander at soul level 13 if you're crazy enough.
If you're really concerned about stamina regen, grass crest shield + chloranthy ring + mask of the mother + ring of favor and protection.
TL;DR,
Don't insult the grass crest shield, or giantdad will come for you.
Honestly, I only ever use it because I like the design on it and for early game stamina regen.
Once I can buy/farm Green Blossoms I unequip it because I see it as unnecassary weight.
If you roll, it rocks.
