Other melee first person perspective game is Condemned, but is a very different setting.
Also, Deliverance--that Medieval Knight game. Pretty good for an Immersive Sim--kind of. It might be more of an RPG than you're looking for, however. Like Skyrim or Oblivion. Plus, the combat leaves a little to be desired. And it's kind of slow-paced. But it has some good features.
The original Crysis... Sort of... Also, Far Cry 2 in the same vein. But I would not say either one is exactly an Immersive Sim. But, Far Cry 2 is a really good Mercenary Simulator!
Might look into Alien: Isolation
Cyberpunk is more like Far Cry 5 than it is an Immersive Sim. I think we were all expecting an Immersive Sim. It's not really what we got from it. Disappointing.
Metal Gear Solid V is TPS, but there's quite a bit of freedom to it.
The quality you're looking for is the ability to decide the outcome of things. In other words, the game should react to your input, rather than reacting to specified, pre-scripted prompts. In other words, you could cut a rope with your sword, or you could use a torch to set a box on fire, then kick the box under the rope, and the fire should burn the rope. Or you could mind-control a guy to cut the rope for you. Or you could use a gas grenade in the area of the rope, then use a flaming arrow to ignite the gas grenade. Or maybe just not do anything with the rope and find some other way to get to your objective altogether. Or even for instance, you choosing not to kill the badguy should yield a different outcome than if you decided to kill them:
That's the sort of thing you're looking for--preferably something with really good level design, also...
Minecraft would actually potentially be a good basis for an Immersive Sim in that it relies heavily upon Systems rather than in Scripts--which is probably why people love it so much and not even realize it. But I still fail to see the "game" in Minecraft, so there's that.

condemned about the combat but not medieval fantasy. but is a good game.
Elderborn about some new games
if you want a very good and deep combat but only MP just Mordhau.
Mount and blade is good too.
