More Open World recommendations?
I like a big open space that is polka dotted with points of interest and mini challenges. I don't mind the grind nor a checklist to complete. Here's what I have and what I like:

Elden Ring - Unmatched dungeon design; tremendous character and build customization.
Zelda Breath of the Wild - Gorgeous visuals; picking up mushrooms or flowers feels more tangible and I don't know why; freedom to climb and glide everywhere.
Mad Max - Everything having to do with vehicles rocks; the dungeons in this setting are gritty, immersive, and fun to explore; combat is just fine.
Spiderman - Freedom of movement with acrobatics is ridiculously fun; good combat.
Batman Arkhams - Mix of stealth and combat are great; dungeons are great to explore and make the stealth amazing.

I definitely prefer behind the back third person, not first person nor top down. I am not into shooters and has been the main reason I can't get into Horizon Zero Dawn.

Thanks for your time! What do you think I should check out?

Get LoZ:TotK. The new construction mechanics and sky areas are a lot of fun.

Also, most Souls games are open world, not just Eldin Ring.

You could try Shadow of the Colossus. It's a classic, but the world is kind of sparse.

The Infamous series, though a bit old, is okay of you like superhero stuff.

You could try the old standards, like the GTA, Far Cry, and Saints Row series.

Are the Shenmue games considered open world, or not?

I think the Xenoblades games and some of the recent Final Fantasies are open world.

Wind Waker is another Zelda game that's open world. And maybe Twilight Princess?

Really, most MMORPGs are technically open world.

The Subnautica games have been a personal favorite of mine, I highly recommend them.

Just Cause series. More vertical combat - grappling hook, parachute, wingsuit, tethers. Maybe skip the first game.

Fallout series,
The Elder Scrolls series.
Assassin's Creed series.

If you don't mind kid-friendly stuff, you could also try some of the LEGO games. 3rd person with barely any shooting - and the later ones usually have decent open worlds with lots of mini-challenges and stuff to collect. Like Lord of the Rings, Hobbit, Batman 2, DC Super-Villains, MARVEL Super Heroes/Avengers, Jurassic World.

Even though it's a little first person in battle, the rest of it is in third person, has stealth, dungeons & exploration. You could try Indiana Jones and the great circle, fun game. Also, try Okami HD. It's inspired by the legend of zelda games, looks great & plays just as well.

Mad Max doesn't have much of anything left once you've completed the game. I feel that there was a major ball fumbled with the potential of such a vast open world with so much variables. Shocking that there isn't even a proper mod created to make more open world content.
