Endings (No Spoilers, please)
I read that are different endings depending on how much you've completed the game (Riddler's trophies).
If I get to the ending without having everything completed, can I still see the other ending? Or, are they mutually exclusive?

There are not different endings. The full ending has one additional cutscene before credits roll. You can view it on youtube.
To see the "limited" ending you have to complete half of side missions. Riddler with all his trophies is only one of those side missions.
I think you can view both of them during one game.

You can definitely view them both, I can confirm this for sure, as it's what I did when I played on PS4

It's not multiple endings in the choose your own adventure way. It's more like you unlock a couple of mini epilogues.

You can usually see both endings in one playthrough. However, if you complete 13 or 14 non-DLC side quests (out of 14 total) before completing the main City of Fear mission, you will only be able to see the full ending; you will have gone too far to see the abridged ending. Which shouldn't be a huge deal, since you won't be missing anything, but you won't be able to tell which parts are exclusive to the full ending.

There are not multiple endings. There is one ending. You unlock more cutscenes and see more of the ending the more you complete, until you see everything at 100%.
