It's a matter of personal preference. I far and away prefer KB+M. controller feels clunky to me.
Being that nearly all keyboards are digital input, you cant simulate the way an analog control stick works for things like driving. This is why i prefer a gamepad for the driving portions of the game vs keyboard. An analog stick will always be able to be more precise for things like driving than a keyboard is.
Well aware, and don't care. This isn't a racing simulator, so i'm not really bothered by the whole "not moving or full throttle" thing. I also find analog thumbsticks to be far too small for my gigantic mitts (I'm 6'5'), as well as EXCRUCIATINGLY over sensitive which you can't do anything about, which just drives me insane. Mice are MUCH better because you can (usually) easily dial the sensitivity in and I can use my whole hand, which gives me FAR more accurate control.
If batman AK let me change the car steering to be done via the mouse, id be happier.
That sort of thing exists in GTA V and I freaking hate it. It's a matter of opinion but it feels like I'm attached to the wheel with a rubber band when using mouse steering. it's both too sensitive to small movements and the arcade style input is just slow to respond
