Or batclaw him if no one's attacking you immediately. Though batclaw is less effective as it can chose another enemy(I think).
Pick up is RT+B on xbox gamepad, dunno about keyboard. I use it if I'm unsure about opponents behind camera. I pick him up and start beatdown while turning camera around.
I'm working on this and The Curtain Falls achievements right now. I'm not sure that Nightwing is any harder to play than Robin (since both lack the Disarm & Destroy special), but his moves feel stiffer and less intuitive to me.
It will be a case of all the things falling into the right place that the right time....

Jac, don't even try for maximum variations or legacy XP points in your combos. As the last round progresses you might end up using every combo move anyway but you don't have to do that in order to get the achievement. All you have to do is survive without taking damage or losing combo. Your goal is Flawless Freeflow, not Perfect Freeflow.
I found that using the Ultra BatClaw Slam -- Nightwing also uses this tactic -- comes in handy in these encounters because it auto-locks on primarily the electrified thugs and Brutes without shields or the gunmen, and pays off when you want to get rid of the blade-wielding Brutes early if you just need to survive the last round. Make certain the Brutes are not holding a shield before you Ultra-Slam them. Two Combo Takedowns will also drop a non-electrified Brute regardless if they're holding a shield.
During the last round I got rid of the medics and ninjas early because they're the most annoying, Combo Takedowns are fine for them. The gunmen, Brutes and Stun-Baton wielders can all be kept at bay with an REC zap. This works great with the Stun-Baton guys because the REC can knock them clear of the group leaving them open to an isolated enemy pickup and quick critical beatdown, so you have a 5x combo move ready to deploy.
Don't break combo by over-using the quickfire Escrima. Arkham Knight unfortunately seems to use the same quickfire gadget rythym as old Arkham Asylum, which breaks your combo if a quickfire projectile is used twice rapidly instead building up to another 3x combo before deploying. Both City and Origins had much better quickfire implementation.
If you think "Chill in The Air" is tough wait until you get to "The Curtain Falls," where you have to Flawless Freeflow not only 3 but 4 characters. I made a Curtain Falls save where I took a break from the frustration and reserved the Robin fight for last. If I emailed you this save you would only need to complete the Robin match and the Curtain achievement should unlock. It would also unlock the Chill achievement simultaneously so then you could go back and 3 star the Nightwing map without the onus of an impending achievement.
The reason I offer this as a last resort is that I went through all these myself and know what a royal freaking buggy pain some of these challenges can be. I honestly don't recall ever rage-quitting a game before, but I've never insulted my computer as harshly as I have while gunning for these 2 achievements. Before you even consider this, complete the following 4 achievements beforehand so only 2 achievements pop at the same time instead of 6:
Secrets of the Batcave
Silent Night, Deadly Night
Eternal
Requiem for a Killer

Like everyone has said, evade. (A,A on a controller, never played with a KB+M oddly enough)
jumping over enemies and love tapping them until you can do a takedown is the easiest/safest thing you can do.
I always prioritize medics, since they pose the most annoyance. You can usualy, if not always hear when a gun is ready to be fired, so you can use that to decide priority.
Batman is invincible if you grapple an electrified enemy(unless they patched that out at some point), so you can use that to your advantage.
There aint no shame in picking up a bat and thwomping brutes.
Pray the camera doesnt zoom in on your butt when you're in a corner.
You're correct about Ultra-Slamming an electrified Brute. They didn't patch that out; I was multitasking and didn't thoroughly proofread before posting. Comment edited, thanks.
Or the devs are trolling us because it does seem at times that the conventions of the game are suspended so that you are denied your goal. Like a Brute smacking you in the back of the head when you are in a takedown sequence!
I'll just keep at it, doing the odd few rounds here and there, ♥♥♥♥ I'm not even on the proper hard ones yet - this could take years
Speaking of Selina I sometimes have to wonder if the fight conclusion to the Catwoman Arkham Episode was WB's revenge for all the bad reviews. I'm beginning to agree with you on the "dev-trolling," and I'm usually the one debunking conspiracies. :-)
All told I probably invested (lost!!) almost 50 sporadic hours going for both Chill in the Air and The Curtain Falls on my first playthrough on my primary account. I'm currently redoing all the predator challenges as the other seven alternate characters and keep getting repeatedly cheesed off with the Nightwing Terminal Velocity map, the only predator map on which I don't seem able to repeat my past victory. I got 3 stars on that map before, why not now? Even Harley's Under The Pale Moonlight map is easier than Nightwing's Terminal.
Keep at it. If you change your mind the save is waiting.
Also common: an enemy is RIGHT ♥♥♥♥♥♥♥ THERE but whoever (Batman, Nightwing, doesn't matter) doesn't detect them and instead aimlessly punches the air, dropping the combo. Sometimes it is due to camera angle - if taking too vertical a view of the arena - but it happens way too often for that to be the only reason for it to occur.
As for the Catwoman fight, it most definitely is a trolling bit of ♥♥♥♥♥♥♥♥. Forget everything you learned about putting together a combo; ignore countering (flip over an enemy that is about to attack); just punch all the things as fast as possible. So annoying.
I really wish Steam just separated DLC achievements :(
