Sentinels are skill monkeys and get a decent amount of feats and powers, but Bao-Dur and T3-M4 are better for that purpose.
Consulars are caster-focused. I've never played one, honestly, so I can't give a good judgment of what it's like playing them.
You can also afford to build them (Guardians) in really eccentric ways. My current run of the game has my Guardian dual-wielding tweaked out Watchman Blasters and still being more powerful than anyone else in my party, even the normally overpowering lightsaber-wielding jedi. It's kinda hilarious.
The only hiccups so far have been Darth Sion and Visas Marr, because I was dumb and didn't take any of the Precise Shot feats at the time. But with them out of the way, I don't have much reason to grab them early anymore.
Just my 2 cents =P
