does influence do anything but dialoge options and the possibility of turning team members to jedi ?

Yes and no - You need to progress through their dialogue to be able to "convert" them, which relies on having some amount of influence with them in the first place.

Can you increase it? Sure - Easy to do in seconds with the KSE savegame editor.

Try the save game editor if you really want to edit stuff.

it's called KSE (kotor savegame editor) works for both 1 & 2 but won't find kotor 2 saves on its own and you need to move your saves from the cloudsaves->usernumber map to the saves map first.

Well for the non force sensitives (droids, mandelore, hanharr) you can get stat bonusses.
And making your buddies jedi is very useful.

I'd love if there was a way to see their level of influence. That would be really helpful. As for knowing what to do to raise their influence there's always this: If you know a big conversation is coming, (usually, they're triggered by you, so you know) you can manually save your game. Then go through the conversation and see what happens. If you lose influence points, you can reload your saved game redo the conversation. It's tedious, but it can be rewarding.

You want the "Remote Tells Influence" mod, which can be found on this page: http://www.gamefront.com/files/listing/pub2/star-wars-knights-of-the-old-republic-ii-the-sith-lords

Note that the way Steam Workshop works with KOTOR 2 is a little weird, so if you have TSLRCM installed, you need to put the files for Remote Tells Influence into the override folder for TSLRCM, not the main KOTOR 2 folder (as explained here: https://steamcommunity.com/sharedfiles/filedetails/?id=488641307)
