If you don't want her to lecture you as much, when discussing your exile from the Jedi Order, choose the conversation choice, "I didn't come here to debate the Council's decision." She'll say something about your exile having granted you wisdom and drop the subject. If you pick anything else, she gets really preachy.
There is a reason for her acting the way she does and it comes out later in the story. You'll just have to play farther and see.
As for the lightsaber, you have to collect parts and build one. She won't give you yours back. Again, there's a reason for this and it will be shown later in the game.
