Getting more Lightsabers and Jedi companions
I just finished Nar Shadaa and Dantooine. So far I only got a single lightsaber and a double-bladed lightsaber. It's been a long time since I played KOTOR 2 (on the Xbox). I remember that by the end of the game I can equip my party with lightsabers because I keep on getting them. Has the drop rate been balanced to avoid getting a bunch of lightsabers?

Also I think I messed up with the Handmaiden since now she won't even talk to me. I read that you need to be at least level 18 to start sparring but she won't even start talking (which is required to make her a Jedi).

One more, remind me how to make Bao-Dur and Mira a Jedi again. I remember for Mira you need to go back to Nar Shadaa but I forgot when.

Last I remember you can spar with handmaiden as soon as she joins your party, I don't know how influence affects the sparring though.

If the Handmaiden won't talk to you it's because you've been spending too much time with Visas. If your influence with Visas is higher than with the Handmaiden, the Handmaiden will want nothing to do with you.

To make Mira a jedi you just need to talk to her a bunch, get her disposition really high, and then talk to her on Nar Shadaa. Outside the entrance to the Cantina/Pazaak Den specifically.

To make Bao-Dur a jedi, you need to have him around for three light-side actions, as I recall. That should unlock a dialogue chain that allows you to make him a jedi.

As for finding lightsabers, you simply need to go places where you find jedi enemies to fight. When you return to Dxun the second time you can get a few lightsabers. You get them from the jedi masters as well, I believe. You definitely do if you're dark side, but I think they give you some as light side as well. There's one in a box in Vogga the Hutt's treasure room too.

Your influence with Handmaiden is mostly based on two things: sparring with her (which you have to space out some but can start once she joins your party) and your dialogue choices. Lightside responses will result in influence gain and vice-versa for dark side. If you make too many dark side choices while she is in your party then eventually she will simply refuse to talk to you and say, "There's nothing more for us to talk about"; she could even start doing this after you convert her to a Jedi. You don't really risk this if you play as a lightside character, but if you go dark side it's tough to avoid; best thing I can say is to try to stay in the gray range till after you find your second jedi master and by then you should have sparred with handmaiden enough to have the option of turning her and you will still have enough time to go full dark side if you like.

As far as the others go, Mira is mostly turned by simply talking with her (again, you have to make mostly lightside decisions); Atton you have to have him in your party to get 3 influence gains and then ask him about his past (after talking with the two twileks on Nar Shaddaa); Bao-Dur is basically the same here. I don't really know about how to get Disciple to turn Jedi since my character is always male.

Lightsabers are found throughout the game though some vary. Here is a list of the ones that I recall finding by planet:

Nar Shaddaa:
Making your own after finding the components
Receiving one from Lootra after reuniting him with his wife (you get either a lighstaber or component)

Dantooine:
Buying the Jedi gear from Jorran in the Enclave
Altering the will you find in the enclave and getting the loot from Zherron (this gain darkside points)
Getting one after sparring/killing Vrook (I think)

Dxun/Onderon Part 1:
Killing a certain cannok (also possible to get a component instead)
Just before you depart for Onderon
After you free Dhagon Ghent from captivity

Korriban:
After finding Vash's corpse/finding she has left for M4-78
Completing the tomb sidequest

M4-78:
Vash's remains

Dxun/Onderon Part 2:
Killing the Sith Lords/Dark Jedi Masters (you get 2 or 3 on Dxun and 1 on Onderon for this)
Raiding the treasure room in the royal palace (2 single or 1 single and 1 short)

You get more on the Ravager and Malachor V, but since you are limited in the party members you have or on your own it really doesn't matter by then.
