STR and DEX are less important and also the easiest to find equipment for that boosts them.
So I would suggest WIS and CHA to 16, STR and DEX to 10 (so there is no -ve modifier) and split the rest between CON and INT.
For feats I would suggest going duelling and a single weapon for the attack and defence gains, rather than 2 weapon fighting which only reduces the penalties.
For skills then as you are LS I would definitely go for treat injury and one other class skill (you get so few feats I would be very reluctant to use one to make a skill cross-class).
Likewise for powers, healing (3), force speed (3) and the other 2 powers you will be able to cast as a single action after confronting the jedi masters. Also stasis (you really want the third level, stasis field) and for direct attack force wave.
I am sure others will have different opinions but what matters is what you feel like doing. As long as your force powers are strong you will be OK as a consular.
For your prestige class you could take any of the three but weapon master is interesting as it allows your consular to become a very capable melee fighter on top of your existing force powers (might want to go 2 weapon fighting if you plan on doing this). Jedi master is the obvious choice but doesn't really get you much more than staying as a consular would (if you were DS then consular and sith lord is awesome, as well as fun!).
