Guardian is the most straightforward. Build your character as a tank, get your lightsaber(s) and just chop the opposition up.
Sentinel is the most versatile and my favourite. I rarely play as anything else because I would miss the skills.
Consular is the hardest early on to keep your character alive. Once you get to the higher levels it becomes ridiculously easy.
When comparing lvl 15 Guardian to Sentinel, Sentinel is only one Feat behind Guardian (fast Feat progression is supposedly Guardian's biggest plus)... meanwhile Sentinel gets A LOT more skill points (which actually matters, way more than in KOTOR I) and Force Immunity featline which is far more useful than Force Jump.
In terms of Health and Force Points lvl 15 Guardian has base of:
- 150 Health (10 x level)
- 60 Force Points (4 x level)
Lvl 15 Sentinel has base stats of:
- 120 Health (8 x level)
- 90 Force Points (6 x level)
neither are particularly useful until you get a lightsaber which I generally get around level 15, if you then switch to weapon master or sith marauder you'll get the option to take specialization
so you are really only missing out on the +3 str or 1d8 damage instead getting a comparable bonus for your other class.
Sentinel. skill bot, good skills but no repair as a class skill. Repair and Comp use being the skills a PC 'needs' stilll with security as a class skill it gets the ability to make some powerful early game anti-droid blasters.
Consular. + 4 Spell DC and additional force powers.
Going Consular-> warrior prestige class is generally considered the best of both worlds. if you are a male the high WIS also feeds into high DEF.
but all the jedi classes are extremely powerful.
But this is for the "magic swordsman" build which gives force powers and decent lightsaber skills
I like Sentinel because you can modify the class to be either more Melee-heavy or Force-heavy if you like
It's ironic how Sentinel was considered to be the worst in KOTOR 1. In that game, skills weren't important aside from Persuade or Treat Injury
I've completed both games in the way of the jedi guardian.
It's cool. Strong melee damage with buffs to tank the enemies,
In KOTOR 2 the beggining is boring,
you cant have a lightsaber for a very long time, which is bad for guardian (weapon master) which relies on lightsabers.
When a got my lightsaber in KOTOR 2, and after 1-2 levels i killed every enemy with 1-2 hits.(most of the time).
the final boss killed me a lot for the first time, but i've changed lightsaber form style, and it was easy.(i don'T know if that was the reason why it's worked).
i'm going to try the consolar way out (ranged force powers), but as i see, (like others said) weak in the beginnig (low defense), and as powerful as the guardian at the end.
As i know Sentinel is between the two (balanced), but i've failed to why, or how it's good.

HOW TO PLAY THE GAME THE HARDEST WAY:
-playing alone: if it's even possible to beat the game without the team.(the fights)
-and, or which class: KOTOR 1 - scoundrel all along KOTOR 2 - same ? maybe.
Anyway choose what you like.
To make the game easier spend your points wisely, and construct a good team for every event.
For the most part of the game you will rely on your teammates far more than on yourself.

Immunity was and always has been OP
And it mattered way more in KOTOR 1 since you fight more Dark Jedi opponents who can rinse your team if you get stunned, feared or paralysed
Skill monkey is just more useful in KOTOR 2 since skills matter
