You should be able to convert her at this point. What you need to do is -
follow the conversation about not wearing clothing to train/you are crippling yourself/don't you have any clothing until she puts on her mother's jedi robes.
Then go talk to Kreia about Handmaidens mother and find out who she was.
Finally, go back to Handmaiden and talk to her about her mother and the force flowing in bloodlines and she should decide to break her oath to Atris and accept your training.
I don't remember the exact dialogue but it isn't too complicated. Just take a save before you start so you can go back. The key thing I guess you haven't been doing is talking to Kreia.
I usually leave Handmaiden on the ship and don't level her up until I am at lvl 18 then do all 3 sparring matches and convert her. It is a minor pain not being able to use her until then but the upside is she gets all those levels as a jedi with force powers.
I have. I've never had a problem doing so, perhaps because I avoid the dark conversation choices with her.
Yeah you can. ihavent tried to do it without cheating though lol. I used the KOTOR2 save editor to constantly keep her and my own affinity where i want them. After you fight Atris she fully commits to either the light or the dark but before that you can easily convert her to a jedi and give her the powers of a sith. Just follow what Cerberus said earlier in my post.
I cheat cuz i just dont have the time. Makes the game flow easier for me.
You just can't have her in your party when you make shady decisions so her influence doesn't drop, all you have to do is keep fighting her and occasionally be a good guy and bam. Instant dark handmaiden

Same thing works with bao-dur, Mira (Although that one was a ballache to do) and Atton
Then as soon as she's in your party, drop alignment asap after getting some influence with her and repeat the same process as with handmaiden.
You'd be surprised at how convieniently you can swap out party members
