Edit : for those that don't have knowledge in security : there is no reason whatsoever that a game should require admin privileges. Even less asking for it while the game is running.

As for gaming, there's breach but only due to hackers getting their grubby hands with the source codes. Only through actual social engineering, e.g a man posing as a pizza delivery man and dropped a malware usb drive and some intern pick up drive and plug into network...
Since there's no instance of any security report on data breaches related to anti-cheat engine. You can rest easy with or without a tinfoil hat.
People: Omg hackers! Do something about it *insert company name*!!!
Also People: How dare you use an anticheat that needs access to the computer!
What do you expect from companies trying to combat hackers? Simple solution, stop hacking and companies wouldn't need anti-cheat.
Now for my personal opinion. No. Games on steam will not have viruses. Or at least that's the logic i'm gonna stick with till something will happen or i will be proven otherwise.
Thats great keep at it. Sadly alas those that prefer such are the extreme minority. Should at least "play" those so you can leave negative review to call it out
