My machine does EXACTLY what yours is doing, I've done literally every hardware troubleshooting and its this darn game thats turning off my pc, literally the only game doing that to my machine.
Faulty PSU's usually do this during gaming cause it's more power intensive than say just using your pc to surf the web. It also doesn't have to do this on every game either, it will start with more demanding games before filtering down to less demanding ones.
For example I have a 5800x, 32gb ram @3777 and a 1080ti and I don't have any problems with the pc shutting down unless I try to up the graphics settings, if I go too high the game crashes but my PC doesn't turn off cause my PSU is fine and so are the temps in my rig.
The OMG the game is doing XYZ to my PC isn't usually the games fault, the game is just make more apparent another existing problem you are not aware of yet.
Like others have said it could also be an unstable mem clock problem.
Once Human it only happened one time, and it was after a long play session.
I used HWiNFO64 to log all readings, there were no appreciable spikes in voltages or amperage, and all temps were nominal, the typical problems never exceeded 70C at any point. I have a RAM kit recommended by both GSkill and Gigabyte as fully compatible with my motherboard, and I only run the AMP memory profile.
No other games played, even if i stream and play (single PC streaming), have any issues, especially a complete power down with no indication of what has occurred. Pick a game released this year, no issues (Palworld, Enshrouded, HD2, Marvel Rivals Beta, all played with no problems). Division 2, WoW, D4 same thing, even at max settings or turning on RT for screenshots.

Using the instructions on that Reddit page I lowered the max boost clock of my 5800X3D down to 4.0 GHz and this has kept the temps at normal levels.
Due to UE5 and nanite the game puts a lot of stress on the system, there aren't many games that use UE5 and nanite. yes the optimization could be better, but even if they optimise the game to the last line of code, it wont get much better, optimization doesnt magically makes the game gain 100 fps or so.
But check the Windows event logs, usually the issue will be shown there.
