If I were to assign a socket type to a sub module slot would it double the capacity increase from +10 to +20 for that module type?

Not worth it. Unless it's literally the last piece your catalyst-ing, you're better off halving the cost of a max def/hp/skill mod because, often, those give you 8 extra space.
