Unless you meant figuratively, haven't actually seen any conversations/cutscenes that couldn't be skipped. I'd know, because I regularly skip them all the time without bothering to watch them first. It sounds like they just didn't want to wait for you, & so moved on without you.
Can't say I blame them. People tend to cycle through tons of coop groups, then move onto the next group after whatever activity is done. So it probably wasn't personal.
As for the random grouping.... there isn't much to understand. Sometimes you get a good roll of the dice, other times you don't; & instead get stuck with AFKers or toxic players. It is what it is, & it's a problem in basically every game (some way more than others).
There's also an option already in the game (under the social tab) to see who you've recently played with; though I doubt it'd have made much difference if they just didn't want to wait, anyway.
I've asked for help in chat from randoms, & received it quickly enough (friendly banter during the activity included also), so the community from my experience seems helpful enough. But they also tend to leave extremely quickly after whatever mission, etc, is done & it's "k, bye. Take care" then gone 2 seconds after.
Because of the grindy nature of these types of game, that 'wham, bam, thank you ma’am' mentality is extremely common to quickly get through all the repetitive bits & speed onto the next. Seems like you'd be better arranging a group beforehand to find similar people, as the overwhelming majority won't wait around long for randoms.
How do you skip a conversation?
Spam spacebar in convos hold escape in cutscenes.
You can press space to skip a single text box or hold escape to skip the whole dialogue or cutscene. Though keep in mind that you can't repeat them.
Oh I know that part, I'm talking about those that say listen to your team mate conversation, I don't know how to skip those
The story for the game isn't anything special, but it's not badly done (Except the godawful lip-syncing) and worth it if your interested in that kind of stuff. Other players will join you even if you fall behind another group.
