do we get all of the descendant listed or either one?

Package is for you to pick one out of the package. You are paying for that selected descendant and some boosters.

If you don't want the boosters, just buy the descendant directly for less cost.

As for how to use, you go to buy descendant for those in the list. The purchase screen will show another buy option via the package ticket. One use only.
