Sun Wukong is a god. It would be like having Zeus or Thor as a playable character. He doesn't fit the theme. Mulan would be a Chinese protagonist who does fit.
The monkey king exists in many games. It's a very popular character not only with the Chinese. Even the For Honor game has his counterpart.
No European would mistake this character for a random monkey in armor.

Honestly, Journey to the West is kind of comparable to the Thousand and One Nights, but for being a single novel rather than a collection of stories. But I very specifically agree with the other half of your assessment.
