On a controller, I swap guns with a down click on the left thumbstick (I think) but... however it's assigned for your controller there's a button to swap between what guns you've got so far. It's fun once the guns are leveled up a bit, and auto aim makes a run a little less tedious while getting used to the rest of it.
Once the dash/reload gets high enough you can basically just dash through levels or whenever's needed and it gives auto reload vs having to wait, which is, super fun.
To me, it's better to have the single base level pistol to open the options for the run... then have all of the further choices later in the selection tree.... which let's us choose. Did you figure out how to select between the gun of your choice once you started getting more of them? You can have all the different categories and switch between any of them any time you want...
