"Why do you play as a male? I don't get it."
It's personal preference. Simple as.
When I was a kid I always played as a male. One day, playing the PS3 version of Skyrim, I decided to try out playing as a female Khajiit just for the hell of it. Next thing I know, I exclusively play female characters ever since if I have the option to do so.
It's not like I have a problem with playing a male, I just prefer females.

It's their game, might as well include themselves in it.
(I've also liked "action girl" movies/tv/etc for a long time. Shows like Buffy, Xena, Alias, etc. So when a game gives me the opportunity to create a kick-ass female character to rampage around with, instead of yet another gruff dude with a crewcut, I'll take it.)
Part of the key here is that I don't "immerse". The character is not an avatar of Me, it's just a fancy playing piece I'm pushing around on a fancy game board; something I'm an outside observer of. /shrug
edit: on a semi-related topic, I've never had any desire/inspiration to use a character creator to try to make a character who looks like me.
kind of nonsense writers can't insert themselves into a book words are not accurate enough. so it's always a estimate and those are never the writer that you read nor it's your self.
if something ain't accurate it's books at least movies/games at least have a physical information pipeline
