In the main game I generally get the Bottle Street Gang members to kill the assasins who have Griff's area covered. You have to venture far enough down the street towards the fish market to trigger the attack but not so far down as you can't draw them back towards the three Bottle Street Gang members who tell you that Slackjaw wants to see you in the distillery. [*Make sure you made contact with the Bottle Street guys first]. The assasins initially come at you shooting darts so while you take some little health loss they are starting and stopping in their attack to shoot the darts. If you go way to far they just blink to you and chop the **** out of you. Usually if you haven't strayed too far down the street it's all good and the Bottle Street boys go at them good and hard killing them all for you. At most it costs you an elixer :)
In the Knife of Dunwall I generally try to get the Hatters and the Watchmen to go at it. This is more tricky as you need to get the wooden barricade down with out actually alerting the Hatters to you and your position. It doesn't always work out but the fastest way is to wait in the window over looking the Hatters yard and when the one Hatter goes closest to the wooden barricade and stops there, shoot him in the head with a bolt. Usually he crashes head first into the wooden barricade destroying it and alerting both the Hatters and the Watchmen, who then fight it out. If the one Watchman is at the far end of his patrol when you do this it may mean you have to wait for a bit. In round numbers both sides are usually but not always down by three and that takes a lot of pressure off you stealth wise later when you want to clean all the goodies out of the house the Watchmen are guarding. :)
In the Witches DLC I have a lot of fun trying to get the Eels and the Hatters together. Usually with me sprinting away from one gang towards the other and then blinking to some high spot. :) That window is short though once you make contact with either side. It's only good when they are both against you.
