It happens to everyone, doesn't matter if your chaos status beforehand was "high" or "low".

Not 100% sure but you can always reload an older save which you didn't go rampage on.
If I get bored doing stealth I press F5 (quick save) and when I get bored of the bloodshed I press F9 (loading the quick save).
Edit: oh and OP don't worry about Bodies they do not affect Ghost at all
Well ... you CAN replay the mission, even if you hit Continue by mistake. As you ride back with Samuel, press Esc and from the menu, select LOAD GAME. In the list of games, find the mission you just did that has "Mission -" in front of the title (check the time/date stamp). Select that and it will start the mission over again at the very beginning.
Just remember, to get Clean Hands or Ghost achievements, you have to do your entire game in one contiguous playthrough. In other words, if at the end of the game, you didn't get the achievements, you can't just go back and replay one mission only. That will not fix it. You'll have to go back and replay the mission in question and continue from there, playing all remaining missions in sequence, to the end.
There's actually a small difference depending on chaos. The higher chaos is, the more weepers come running over the bridge. With a minimum of about half a dozen if you haven't done a single action that raises chaos, and about two-three dozen in waves if you've gone completly hogwild.
Tiny, tiny difference, I know, but thought I'd mention it.
Edit: I should mention, when I was testing this, I was perched on a pipe looking towards the bridge. If you move quickly from the boat to underneath the bridge, fewer weepers will spawn. Passing under the bridge stops the remainder from spawning.
