How does the Garrador work?
Currently playing through my first Professional difficulty run, and just survived the Garrador. But I'm curious as to how he even works. He would constantly detect me even when I made no noise, and even when I wasn't moving at all (sound cue, charge, and everything).

Numerous backstab attempts failed because instead of giving me the prompt, he would instead suddenly turn around with the backhand attack and force me to run. How does he actually work, is there some hidden quirks that the game is running off of that isn't really made clear?

He seems to just cheat on higher difficulties, but if you stay crouched he whiffs most of his attacks. Run away if he rages out though, those will hit you even while crouching. You can even rub up against him while crouching and he'll still do basic swipes and miss.

In og, Garrador has 360° detection radius of about 2m.

In re4make, Garrador will constantly back claw swipe after certain amount of time had passed. And for pathing, its programmed to always slowly walk to your direction when Garrador enter calm state.

If you want to go for backstab method, I suggest run to purposely create noise then crouch away. Its much easier to control Garrador in rush state than in calm state. Once Garrador rush into empty, quickly sneak up and backstab him.

I've had them come charging at me when standing still crouched for a minute. If I just stay crouched and walk around they usually can't get me.

The blind guy ? On hardcore he rushes to you and attacks the moment you make a sound (any weapon except crossbow, running, environmental sounds like walking against a hanging chain. Shooting a bell will make him go towards the bell though)

As long as you make no sound and don't go too close he'll stay chill. He can, and will, "see" you when you're in attack range, so keep a slight distance, he'll slowly go towards you even if you're far too, but it's so slow he can never actually catch you and you can circle around him to backstab

I retried the sequence with the two of them a few times so I can tell that they don't cheat, they legit only rushed to me when I made a sound

It's because Leon farts in the crouched state, and the Garrador can smell it and gets angry.
