In re4make, Garrador will constantly back claw swipe after certain amount of time had passed. And for pathing, its programmed to always slowly walk to your direction when Garrador enter calm state.
If you want to go for backstab method, I suggest run to purposely create noise then crouch away. Its much easier to control Garrador in rush state than in calm state. Once Garrador rush into empty, quickly sneak up and backstab him.
As long as you make no sound and don't go too close he'll stay chill. He can, and will, "see" you when you're in attack range, so keep a slight distance, he'll slowly go towards you even if you're far too, but it's so slow he can never actually catch you and you can circle around him to backstab
I retried the sequence with the two of them a few times so I can tell that they don't cheat, they legit only rushed to me when I made a sound
