How EXACTLY do you parry?
I played through the demo a couple of times and never could figure out how you parry attacks. A button prompt never came up, I just got grabbed, hit with a flying axe, or chainsawed.

Like take the following video, at 3:58 he parries an attack (and many other attacks throughout the video) and I haven't the faintest clue how he's doing it.

That's it, just have your knife out? No other button press? And you will automatically parry?

I'll keep it mind. Can you spam it like the other guy says? Rapidly tap space and have it work?

Chainsaw guy you get a big promt to do the parry. the other enemies look next to the knife icon you get a hint there when to do the parry.
Practice in the village as if you die you will restart there again!

hold space when the enemy is charging attack.

A button prompt actually does come up though it's a bit small and easy to miss (I did at first), it's beside the icon of your knife to the bottom right. If space is a bit annoying for you like it was for me there's a setting that makes it so you can just use the left mouse button to parry which felt more natural to me.

Yea I'll probably have to go with that. These QOL features are nice, like not having to spam a button to get out of a grab.

Yep! was pleasantly surprised when I saw that since I initially manually rebinded the space key to middle mouse since I didn't like the default. I'm not sure about what the others are saying about "holding space" but spamming does work most of the time though I've had times where an enemy managed to strike me inbetween mouse button spams.
