If you're still newish to Sins I would try getting some more practice on Vanilla before switching to SoGE. Or you can try one of the other Star Wars mods, like Interregnum. In fact any mod would probably be an improvement; SoGE probably has the toughest AI of any mod.
I haven't tried it on easiest. But again, the mod gives lots of bonuses to the AI that aren't from the normal difficulty setting. These extra bonuses are the same on easy as they are on unfair+. You certainly should not be playing this mod as your first game in Sins because of this.
