In an extremely short nutshell:
Sins of a Galactic Empire (SoGE) is the oldest and has the most Star Wars factions, including the only one to have the Clone Wars era and Yuuzhan Vong. However, it radically changes the gameplay of Sins. The battles are much larger scale, but the units are smaller, you spend most of the time really zoomed out, and the individual ships aren't as unique IMO. It's also can be harder to learn due to buffed AI, especially on lower difficulty levels.
Interregnum on the other hand is the most like standard Sins. In fact the original factions are still playable if you want them to be, along with new factions like the Galactic Empire, Imperial Warlords and Rebel Alliance. It also includes new features like hero units, random encounters, and a bunch of gameplay and balance enhancements. It just recently added Mandalorian Raiders to replace the pirates and will add the New Republic as a faction at a later date.

Ascendancy is the one I'm least familiar with, so I might be missing some things. The mod is set after the Battle of Endor in the old legends universe, where the New Republic battles the remains of the Empire. There's also some pretty unique legends factions like the Empire of the Hand. Gameplay wise it's fairly unique and has it own UI system but its not as big of a change as SoGE from what I noticed.
Hope this helps. Explaining what features you want or like in general would help us make a specific recommendation, but honestly there may be no real great alternative to trying all three and see what you think.
Overall I view Ascendancy as the best star wars mod and total conversion, and Interrgerum as the best unoffical star wars dlc. Unless you wish to play with the original fractions I think both mods are of the same quality, but I think with Ascendancy's next update it will become the better star wars mod.
SOGE - its great because of the other factions along with alot of maps. wanna go empire vs old republic or fight the CIS against the empire or the New Republics vs Vong(even tho new republic gets its ass kicked it in the books)
Interregnum - its a great mod, limited starwars factions tho but its still very good.
Ascendancy - this one i like most but the UI isn't to my liking, it also has very limit map selection.
Try them all and see how you get on with em.
At current the 1.86v kinda messed with the AI into just building frigates and spamming them like nuts. facing off against 500+ frigates its fun to watch but hurts if ur not prepared.
But. Bombers help alot XD
