When I play though, majority of the times regional counties convert by themselves, instead of the ones i'm actually attempting to convert.
Also, reforming the Norse faith through owning counties with holy sites. If you do this it's much better for your religion in the long term. But you tend to get the few vassals who are dedicated to the Old Norse.
You can stem the tide of religous spread by helping keep your religous authority high. This is done by winning raiding, holy wars etc...
Provences will convert over time to the rulers faith. If your vassal is christian, they will over time convert to catholicism, however if the vassl is pagan they will eventually convert norse.
I have a guy standing in my capital for 60 years trying to convert its religion from jewish to tengri....
