How to see all my vassal / courtiers claims?
I feel like pressing my vassal / courtier claims is easier then fabricating claims and thus loosing gold and prestige, so where can I see that?

You can see anyone's claim on his personal window. Or when you want to send your cancellor to fabrice claim on some land, check its ruler and click on the declare war button before doing it. You can see all your casus bellis to declare war and if you have some, you dont have to fabricate another claim

I know but it takes too much time and effort to check it for all vassals and courtiers...if there was a way to check all casus bellies and not switch from one to one.

There are specific conditions to make a claimant your vassal. If the territory you're claiming is de jure part of one of your titles they'll become a vassal. If they're a member of your dynasty and you press their claim, they'll become your vassal. One thing that always works (AFAIK) is giving them some land first so that they're already your vassal.

Obviously those all require the title be lower ranked than your own.

Otherwise they'll typically become independant.
