I find playing the Zunists impossible as you can't demand people to convert to your religion which causes your vassals to remain their other religion and hate you for it, and you can't really convert well anyone due to your religion being pagan :( Any one had success?

Might as well convert to Hinduism lol

there's two main way to play as a zunist. one is to cheese it and be the caliph and convert to the zunist religion, and the other way is if you really want to play and not cheese it, which is to become a vassal to a muslim. preferrably to a weak one.
Actually I did a way which wasn't either one of them, I sent my diplomat to the Caliph's capital so he liked me and wouldn't declare war on me, in 100 years I was able to take everything west of Pakistan avalible (Not all of Taid, I think that's the name) and then I stockpiled around 5000/7000 gold to spend on making 10 churces, which bumped up the religious morale authority to 50% so I could reform.

It takes time, but it's really really fun.

currently a vassel to the muslim kingdom in india. The caliph isn't going to war with my leige so I have some time...but yeah this is hard (thankfully you can still conquest under a muslim)

Zunists just require some strategy, after you conquer 3 holy sites, you need to time county conquests and temple builds in order to reach 50% authority to reform, as it's really hard to obtain abassid territory without Great Holy Wars or Holy Wars.
Improve relations with Caliph at all times, rely on mercenaries, and pegan attrition in case they do declare war. Try to capture all of the muslim and hindu missionaries and ransom them just beware that you don't get caliph hostile.

I just recently bought charlemagne DLC, so I'm going for Seven Centuries achievement with Zunists, doing World Conquest .

Then you got lucky. I attempted this as well but it didn't prevent the Caliph from declaring holy wars against me. I survived by converting to the attacker's religion everytime someone started a holy war against me. Then I converted back when permitted.
He won't attack you if he has 40+ opinion of you from my experience
