Well, I dont really care why they do it, I just don't want them to do it.
All cultures with dynasty names set (arabs, persians, and a few others) will use the dynasty as the realm name, unless one already exists -- you see this in the 1066 start with the Zirids/Granada for example.
Rum is actually one of the few scripted realms which will ALWAYS use the realm name instead of the dynastic name, so even if the Seljuks lose Persia Rum will still be Rum.
Here's looking at you, lone Bolghar Muslim in Russia! (This guy, by the way, doesn't use his dynasty name. My current game he is quite muslim, quite Bolghar, and very content to call himself the Khan of Volga Bulgaria.)
Mongols don't follow the dynasty naming pattern as well. Except, I guess, Timur.
No, all arab cultures do this. Even when they turn into Tengri's or Norse.
